Before & After: Yay! Sumac! Here’s the thing though: sumac-lemon combos = simply too sour. You get warmth from the spices, a burst of freshness from the tomatoes, mellowy texture from the aubergines and crunch from the pine nuts, but that level of sourness, for me, was simply too much. Ironically, it tasted much better straight from the fridge the day after.
