Mighty Spice Express: Rita’s Tamarind and Coconut Prawn Curry

Before & after: Tamarind has long been one of my favourite additions to curries. The recipe only calling for 3 tsp left me slightly puzzled. Rightly so. If you’re going to put “tamarind” in the name of your dish, there should be a discernible taste in there. The curry was spicy (three red chillies in there, after all) but that was about it. Not horrible, but wouldn’t make it again. Did enjoy eating the leftovers, but that’s mostly thanks to the prawns. 😉
